Squash is such a great vegetable, and grilling it just adds to the flavor by creating a smoky sweet taste that goes with anything. Just cut the squash into slices, heat some olive oil with garlic cloves, brush the slices with the warm oil, then lay the slices right on the grill. Grill for 10 to 15 minutes, until they are tender. Brush with the olive oil mix once through the grilling process, and turn from time to time to prevent sticking.Or cut the squash into chunks and skewer them. Brush with olive oil and grill for 7-10 minutes. However you cut it, this will be a great side dish.
Cook Stew, Chili, or Casseroles
Another great way to use your grill is to cook up a big batch of chili. Just use your favorite chili recipe and a cast iron pan or Dutch oven, place it on the grill, and let it cook for an hour or two, making sure to stir it from time to time to prevent sticking. You’ll love the smoky, thick flavor so much you might just not make it any other way. And did you know that you can cook casseroles on the grill? If you have a lot of people coming over to enjoy the big game and you just don’t have enough room for all the food you’re preparing, use your grill as an oven. Just heat it to medium heat and put the casserole over indirect heat, and in 45 minutes to an hour you’ll be enjoying a tasty, homemade casserole along with all the other sides you’ve been preparing in your oven.
